Blackbird Pie
Black Bird Pie
Serves 6 – 8
Ingredients:
- 3/4 c. sugar
- 1/3 c. flour
- 1/2 t. salt
- 2 c. milk
- 2 eggs
- 1 tablespoon butter
- 1/2 c. semi sweet chocolate chips
- 1 teaspoon vanilla
- 1 baked and cooled pie shell or a cookie crumb crust
- 1 recipe of Homemade Whipped Cream, page 128
- 1 recipe of Gingerbread People, page 38
Directions:
Make the recipe of Gingerbread People, but cut in the shapes of birds and bake according to the directions. These can be made ahead of time.
Make or purchase the pie shell.
Filling:
In a saucepan whisk together sugar, flour and salt. Add 1 cup of milk and mix until smooth. Bring to boil over medium heat, stirring briskly. Continue until smooth and thick – about 2 minutes. Remove from heat. With fork, beat eggs with remaining milk; gradually stir into hot mixture, then put back over heat. Bring to a boil, stirring constantly and boil until mixture thickens a bit, about 1 minute. Remove from heat. Stir in butter, chocolate chips and vanilla. Stir until chocolate is melted. Pour into pie shell. Chill for at least 2 hours before cutting.
Make the recipe of Homemade Whipped Cream, or use a commercial whipped topping.
Immediately before serving, decorate the top of the pie with the gingerbread birds. The Gingerbread Birds begin to soften in the pie filling so they cannot remain as decorations for long. As you serve the pie and enjoy the nursery rhyme, you might want to remove any un-served birds to save for later.
